Ingredients
  1. 160g chicken breast, steamed and shredded
  2. 1 small red bell pepper, shredded
  3. 1 small green bell pepper, shredded
  4. half a red onion, cut into thin wedges
  5. half cup shredded carrot
  6. half cup fresh basil leaves
Seasoning
  1. 1 lime, juiced
  2. 1 tablespoon fish sauce
  3. 1 tablespoon finely chopped red onion
  4. 2 small red chili, seeded then chopped finely
  5. 1 tablespoon rice vinegar
  6. 2 teaspoon sugar
Instructions
  1. The dressing: mix all seasoning in a small bowl, stir to dissolve the sugar.
  2. Put the chicken and all vegetables in a large bowl, pour the dressing over and toss well to combine.
