Ingredients
  1. 1 rice cup long grain rice (160g), washed and drained
  2. 1 tablespoon olive oil
  3. 2 cloves garlic, minced
  4. half cup diced red onion
  5. 1 cup chicken stock
  6. 250g mixed seafood
  7. 1 ripe tomato, diced
  8. 1 tablespoon coriander leaves
Instructions
  1. Heat oil in pan over medium heat, saute onion and garlic until fragrant, then pour into a rice cooker.
  2. Add rice and stock to the rice cooker, stir to mix well, then cook with lid on for 15 minutes.
  3. Stir in seafood, tomato and seasoning. Lid on and continue to cook for another 10 minutes or until it is done and kept warm for 5 minutes.
  4. Fluff rice with a large fork. Stir in coriander leaves before serving.
Seasoning
  1. half a lime, juiced
  2. A pinch of chilli powder
  3. 1/4 teaspoon paprika
  4. salt to taste
