Ingredients
  1. 200g peeled raw prawns
  2. 1 tablespoon plain flour
  3. 1 shallot
  4. 1 teaspoon fish sauce
  5. 1/4 cup coriander leaves, chopped roughly
  6. 1 tablespoon vegetable oil
Instructions
  1. Chop 50g prawns into small pieces.
  2. Blend the other ingredients (except oil and coriander) in a food processor to form a paste, mix in the chopped prawns and the coriander leaves.
  3. Heat the oil in a non-stick pan over medium heat, spoon out the prawn mixture and flatten into patties, then place in the hot pan to fry for 2 minutes on each side or until golden and cooked through. Makes about 8 prawn cakes.
  4. Serve with sweet chilli sauce and lime wedges.
